Comenta textos escritos por personas ligadas a la producción o comercialización del café entre 1774-1895, en el Caribe y en espacios continentales, Había diversidad, tanto en la siembra y atención del cafetal como en el procesamiento del grano, lo que incidía en la calidad del producto.
EL beneficiado se efectuaba principalmente por vía húmeda, aunque también había beneficiado por vía seca.
