Desarrollo de un plan de negocio para la implementación de un ''food truck'' de un ingrediente central, ubicado en la GAM en Costa Rica

Resumen
El presente Plan de Negocio nace del estudio de las tendencias alimentarias a nivel
mundial, las cuales apuntan a una inclinación por el consumo de alimentos
saludables principalmente en la población joven. La combinación de la innovación y
el análisis del entorno, permiten identificar una tendencia en dicho consumo
saludable y sumado a esto una reciente popularidad de los camiones de comida en
el país, permitieron identificar una necesidad que puede ser satisfecha a través del
modelo de negocio propuesto.
La idea consiste en la creación de un “Food Truck” de comida saludable tipo
gourmet que gira en torno a un ingrediente central (aguacate), con un mercado meta
de consumidores entre los 15 y los 32 años de edad, y que se ubique en la Gran
Área Metropolitana en Costa Rica. Con un enfoque principal de clientes en centros
de estudio y parques industriales. Para el desarrollo del proyecto se contemplaron
cuatro estudios principales.
El estudio de mercado muestra los resultados de una encuesta realizada y
determina que el consumo de alimentos saludables está incrementando en el país,
además que el aguacate es percibido como un elemento saludable.
El estudio Técnico-Operacional muestra los requerimientos generales para la
correcta operación del camión de comida, los cuales son menores en relación con
una operación fija.
Mediante el Plan Administrativo-Legal se evidencia que hay un vacio regulatorio para
esta actividad comercial en el país y que la decisión queda a cargo de cada gobierno
local (municipalidades), sin embargo se evidencia una reciente apertura.
Finalmente en el plan Financiero los resultados posteriores al análisis demuestran
que el proyecto es factible económicamente ya que la recuperación de la inversión
inicial se da en el primer semestre de operación, el costo por platillo es competitivo
en relación con los precios del mercado y permite una ganancia del 30%, adicional el
TIR es de 189% lo cual indica que es un negocio favorable de implementar.
This Business Plan is born from the study of food trends worldwide, which point to an inclination for the consumption of healthy foods, mainly in the young population. The combination of innovation and the analysis of the environment, allow to identify a trend in said healthy consumption and added to this a recent popularity of food trucks in the country, allowed to identify a need that can be satisfied through the proposed business model. . The idea is to create a "Food Truck" of healthy gourmet food that revolves around a central ingredient (avocado), with a target market of consumers between 15 and 32 years of age, and located in the Greater Metropolitan Area in Costa Rica. With a main focus on clients in study centers and industrial parks. For the development of the project, four main studies were contemplated. The market study shows the results of a survey carried out and determines that the consumption of healthy foods is increasing in the country, and that avocado is perceived as a healthy element. The Technical-Operational study shows the general requirements for the correct operation of the food truck, which are minor in relation to a fixed operation. Through the Administrative-Legal Plan it is evident that there is a regulatory vacuum for this commercial activity in the country and that the decision is in charge of each local government (municipalities), however a recent opening is evident. Finally, in the Financial plan, the results after the analysis show that the project is economically feasible since the recovery of the initial investment occurs in the first semester of operation, the cost per dish is competitive in relation to market prices and allows a profit of 30%, additionally the IRR is 189% which indicates that it is a favorable business to implement.
