Resumen
El presente documento pretende ser una guía para comprender el concepto de seguridad alimentaria, además enfoca las principales acciones realizadas desde los organismos internacionales, así como desde el gobierno costarricense para lograr indicadores alimentarios adecuados para la población. Además, se desarrolla el concepto de seguridad alimentaria y su diferenciación con la soberanía alimentaria. El documento inicia con una conceptualización del término de seguridad alimentaria y los indicadores planteados para medirla. A partir de ello, se avanza con la presentación del enfoque de doble componente empleado por la FAO, el cual demuestra el papel trascendental que desempeña la agricultura en la consecución de la seguridad alimentaria. Dicho esto, se expondrá la seguridad alimentaria de Costa Rica a través de sus diferentes dimensiones, así como las principales políticas establecidas para mejorar la alimentación de la población. Por último, se analiza la importancia que tiene la agricultura familiar en Costa Rica como un sistema de producción que garantiza tanto la seguridad como la soberanía alimentaria.
This document aims to be a guide to understanding the concept of food security, and also focuses on the main actions carried out by international organizations, as well as by the Costa Rican government to achieve adequate food indicators for the population. In addition, the concept of food security and its differentiation from food sovereignty is developed. The document begins with a conceptualization of the term food security and the indicators proposed to measure it. From this, progress is made with the presentation of the two-pronged approach used by FAO, which demonstrates the transcendental role that agriculture plays in achieving food security. That said, Costa Rica's food security will be presented through its different dimensions, as well as the main policies established to improve the population's nutrition. Finally, the importance of family farming in Costa Rica as a production system that guarantees both food security and sovereignty is analyzed.
