Resumen
En la actualidad, el enfoque teórico de la calidad incorpora las dimensiones de la inspección, el control y el aseguramiento de los procesos; sanidad, inocuidad, el análisis de riesgos y las herramientas para las buenas prácticas; la filosofía, los modelos y sistemas de gestión; la legislación, normas, políticas y jurisprudencia nacional e internacional; garantía de calidad, atributos de valor diferenciadores, imagen, identidad, psicología del consumidor, sistemas de sellos y signos distintivos; y, sistemas de certificación y acreditación. Los consumidores, por su parte evidencian un conocimiento más amplio del concepto de calidad que incluye los aspectos sensoriales, sanitarios, de conveniencia y de proceso, como los productos orgánicos y aquellos no modificados genéticamente. La denominación de origen (DO) “queso Turrialba”, una propuesta originada en la autogestión de productores de Santa Cruz de Turrialba, en esencia ha permitido la transición de una “proximidad territorial” hacia una “proximidad organizada”, mediante la generación de redes para la gestión de un proyecto colectivo donde el conocimiento local y la transferencia de tecnología externa se fusionan. El proyecto, enfocado en el diseño e implementación de un sistema de trazabilidad por parte de un grupo piloto, se ha desarrollado mediante en una participación activa de los productores. En particular, los marcos institucionales han sido un soporte fundamental, trascendiendo la certificación de la DO, hacia la inducción de un proceso de dinámica económica e institucional para la generación de competitividad territorial y el desarrollo local.
Currently, the theoretical approach to quality incorporates the dimensions of inspection, control and assurance of processes; health, safety, risk analysis and tools for good practices; philosophy, management models and systems; legislation, standards, policies and national and international jurisprudence; quality assurance, differentiating value attributes, image, identity, consumer psychology, systems of seals and distinctive signs; and certification and accreditation systems. Consumers have a broader understanding of the concept of quality, which includes sensory, health, convenience and process aspects, such as organic and non-GMO products. The denomination of origin (DO) "Turrialba cheese", a proposal originated in the self-management of producers from Santa Cruz de Turrialba, has essentially allowed the transition from "territorial proximity" to "organized proximity", through the generation of networks for the management of a collective project where local knowledge and external technology transfer merge. The project, focused on the design and implementation of a traceability system by a pilot group, has been developed through the active participation of producers. In particular, the institutional frameworks have been a fundamental support, transcending the certification, towards the induction of a process of economic and institutional dynamics for the generation of territorial competitiveness. and institutional dynamics for the generation of territorial competitiveness and local development.
