Potencial turístico cultural del caribe costarricense: arquitectura y gastronomía en el casco central de limón

Abstract

La presente investigación académica, aborda los resultados preliminares de un proceso de exploración iniciado en el año 2019 por el Equipo Interdisciplinario de Investigación en Cultura y Desarrollo para la Región Huetar Norte y Caribe, de la UNA, Campus Sarapiquí. Su objetivo pretende visibilizar el potencial turístico cultural de la arquitectura y gastronomía presentes en el Casco Central de Limón, para el desarrollo territorial de este centro urbano del caribe costarricense. Para conseguir el objetivo propuesto, el documento inicia su lectura con una breve contextualización de orden geográfico, sociohistórico, demográfico, cultural, económico, turístico y ambiental del territorio que está sujeto a análisis. Seguidamente, ubica un enfoque teórico y problema de investigación que cuestionan el modelo de desarrollo turístico costarricense dominante, frente a los potenciales del turismo cultural en el corazón de esta metrópolis caribeña, desde el reconocimiento de su riqueza patrimonial arquitectónica y gastronómica. La estrategia metodológica empleada, parte del estudio bibliográfico, la observación no participante y un trabajo de campo honesto, horizontal y riguroso con actores claves inmersos en dinámicas sociales ligadas a la arquitectura, la gastronomía y el turismo en el territorio delimitado. Sus conclusiones abarcan la oportunidad de un modelo de desarrollo turístico para el caribe costarricense, enfocado al beneficio colectivo (habitantes del territorio) por encima del individual (empresa trasnacional deslocalizada) que contemple su riqueza cultural como eje trasversal. Demostrando con valiosos hallazgos en torno a la arquitectura y la gastronomía local, posibilidades reales de cara al bienestar de la provincia de Limón.

This paper addresses the preliminary results of an exploratory process, started in 2019 by the Interdisciplinary Research Board on Culture and Development for the Northern Huetar and Caribbean Regions, National University, Sarapiquí Campus. The main objective of this work is to make visible the tourist cultural and gastronomic potential presented in Limon downtown, for the territorial development of this urban area of the Costa Rican Caribbean region. The document starts its reading with a brief geographical, sociohistorical, demographic, cultural, economic, tourist and environmental contextualization, of the territory which is being analysed. Afterwards, it addresses a theoretical approach and research problem which questioned the Costa Rican dominant tourist development model, towards the potential of the cultural tourism in the “heart” of this Caribbean metropolis, since the recognition of its architectural and gastronomic richness. The methodological strategy used, started from a bibliographical study, no participative observation, and a conscious, horizontal and accurate field work, with key participants, immersed in social dynamics linked to architecture, gastronomy and tourism in the delimited territory. Its conclusions prospect the opportunity of a tourist development model for the Costa Rican Caribbean. It focussed on the collective benefit (inhabitants of the territory) over the individual benefit (transnational delocalized enterprise), that includes its cultural richness as a transversal axis. Demonstrating through worthy findings towards architectural and local gastronomy, real possibilities for the benefit of Limon province.
