Resumen
Costa Rica, al igual que en México, y Centroamérica, la producción y el consumo
de fríjol se remonta a la época precolombina. Por razones culturales y su alto valor
nutritivo, el fríjol es uno de los productos considerados básicos en la dieta de la
población costarricense y a nivel regional es la principal fuente de proteínas. La
producción de granos básicos se ha fundamentado como primal para abastecer la
creciente necesidad alimentaría de su población.
Por tanto se comprende como la alimentación del costarricense en general, está
muy arraigada en el consumo de granos básicos, como el arroz, el fríjol, el maíz y
legumbres varias que entran a cubrir la necesidad de todas las clases, estos
forman parte elemental de la canasta básica por la misma razón.
El fríjol, es una leguminosa producida localmente en dos variedades, la roja y la
negra; y se puede localizar su desarrollo productivo específicamente en dos zonas
geográficas, la región huetar norte y chorotega, junto con lo realizado en la región
brunca.

For cultural reasons and its high value nutritious, the bean is one of the products considered basic in the diet of the Costa Rican population and regionally is the main source of protein. The production of basic grains has been based as primal to supply the growing food needs of its population. Therefore, it is understood how the Costa Rican diet in general is deeply rooted in the consumption of basic grains, such as rice, beans, corn and several legumes that come to cover the need of all classes, these they are an elementary part of the basic basket for the same reason. The bean is a locally produced legume in two varieties, the red and the black; and its productive development can be located specifically in two zones geographical areas, the Huetar Norte and Chorotega regions, together with what has been done in the brunch.
