Resumen
La crianza de animales, grandes y pequeños representa una actividad muy lucrative para todos aquellos productores que han puesto su atención en este tipo de actividad, así como una gran oportunidad de apoyo económico y un factor importante para el desarrollo cultural de muchas poblaciones. Por esta razón la economía agrícola de los países en desarrollo ha demostrado en varias ocasiones tener una profunda dependencia de los recursos ofrecidos por la producción animal. Este equipo investigador se propuso desarrollar el presente estudio para brindar una herramienta que sea útil en la toma de decisiones para la implementación de pequeñas empresas privadas de tipo agroindustrial, y cuya finalidad es la puesta en el mercado local de Pérez Zeledón y zonas aledañas la carne de conejo para el consumo humano. En el caso de este estudio se recopila información necesaria para la incursión en un mercado nuevo en lo que respecta al consumo de la carne de conejo por lo que se procedió a investigar en la población urbana del cantón de Pérez Zeledón, y en sectores tales como, instituciones del Estado (Entes de apoyo al agricultor como el Ministerio de Agricultura y Ganadería y el Ministerio de Salud así como colegios técnicos, entre otros) para determinar la aceptación de este producto y los elementos a considerar si se desea incursionar con éxito en este mercado.
Animal husbandry, large and small, represents a very lucrative activity for all those producers who have turned their attention to this type of activity, as well as a great opportunity for economic support and an important factor for the cultural development of many populations. For this reason, the agricultural economy of developing countries has shown on several occasions to have a deep dependence on the resources offered by animal production. This research team proposed to develop the present study to provide a useful tool for decision making for the implementation of small private agro-industrial enterprises, whose purpose is to put rabbit meat for human consumption on the local market of Pérez Zeledón and surrounding areas. In the case of this study, necessary information is gathered for the incursion into a new market regarding the consumption of rabbit meat, so we proceeded to investigate in the urban population of the canton of Pérez Zeledón, and in sectors such as State institutions (support entities for farmers such as the Ministry of Agriculture and Livestock and the Ministry of Health as well as technical colleges, among others) to determine the acceptance of this product and the elements to consider if you want to successfully enter this market.
