Estudio de factibilidad para la instalación de una planta procesadora de harina de pejibaye (Bactris gasipaes kunth) por parte de la Asociación de Productores de Frutas de la Región Brunca (ASOFRUBRUNCA).

Abstract

El presente estudio de factibilidad se llevó a cabo para conocer la viabilidad de implementar una planta procesadora de harina de pejibaye en el Cantón de Pérez Zeledón por parte de la asociación de productores de frutas de la Región Brunca (ASOFRUBRUNCA). Es importante recalcar que dicha asociación tiene como objetivo incorporar una planta procesadora de frutas mixtas, en la que se van a procesar frutas como rambután, banano, pejibaye y cítricos, pero para fines de este proyecto decidimos enfocarnos a la producción de harina de pejibaye, al ser este un producto nuevo en el mercado del Cantón de Pérez Zeledón. La importancia de implementar dicha planta en el Cantón de Pérez Zeledón, específicamente en Pueblo Nuevo de Cajón, es por la falta de comercialización y distribución de la fruta de pejibaye, ya que actualmente existe sobreproducción y no se han encontrado métodos para realizar una comercialización eficaz del producto, se pretende comercializar el fruto del pejibaye en la presentación de harina de pejibaye, es por esto que se realizaron los estudios pertinentes para conocer la aceptación por parte de los consumidores de San Isidro de El General. Los estudios realizados fueron el estudio de Mercado, Estudio Técnico, estudio organizacional, el estudio de impacto ambiental, estudio legal y por último el estudio financiero.

This feasibility study was carried out to determine the viability of implementing a pejibaye flour processing plant in the Canton of Perez Zeledon by the Association of Fruit Producers of the Brunca Region (ASOFRUBRUNCA). It is important to emphasize that this association has the objective of incorporating a mixed fruit processing plant, in which fruits such as rambutan, banana, pejibaye and citrus will be processed, but for the purpose of this project we decided to focus on the production of pejibaye flour, as this is a new product in the market of the Canton of Perez Zeledon. The importance of implementing this plant in the Canton of Perez Zeledon, specifically in Pueblo Nuevo de Cajon, is due to the lack of marketing and distribution of pejibaye fruit, since there is currently overproduction and no methods have been found to effectively market the product. The intention is to market the pejibaye fruit in the presentation of pejibaye flour, which is why the relevant studies were conducted to determine the acceptance by consumers in San Isidro de El General. The studies carried out were the market study, technical study, organizational study, environmental impact study, legal study and finally the financial study.
