Propuesta de una ruta gastronómica de platos populares y tradicionales guanacastecos para el distrito de Las Juntas de Abangares, Guanacaste

Resumen
En los últimos años la provincia de Guanacaste, dentro del contexto económico se ha visto favorecido por el desarrollo y auge del sector turístico, que ha significado una demanda de productos y servicios locales. En cuanto al cantón de Las Juntas de Abangares, el turismo tiene poca actividad, uno de los puntos por el cual nace el interés de formular una propuesta para diseñar una ruta gastronómica, siendo este un producto que beneficie productivamente a la comunidad y en donde se relacione el sector turístico con el cultural.
El objetivo principal del presente trabajo es proponer una ruta gastronómica de platos populares y tradicionales en el distrito de las Juntas de Abangares, que permita el fortalecimiento del desarrollo local y la difusión del patrimonio cultural material (PCI) gastronómico de la provincia de Guanacaste. Y para lograr este objetivo fue necesario establecer procesos metodológicos que permitieron determinar la categorización de la oferta gastronómica en el distrito de Las Juntas, donde primero se estableció el perímetro, en el cual se trabajó. Luego, se realizó una revisión documental de los locales gastronómicos y, posteriormente, se sistematizó la información en fichas de registro para planta turística-alimentación.
Asimismo, se consiguió caracterizar los productos gastronómicos potenciales para la preservación y salvaguarda del PCI gastronómico guanacasteco, en las fichas de registro creada para estos, las cuales se generaron después de la revisión literaria, desde donde se estableció criterios para descartar cuál plato formaría parte de la ruta y cuál no. Y, por último, se formuló los aspectos fundamentales para diseñar una networking, que optimice la creación de encadenamientos productivos en la ruta gastronómica, por medio de una revisión documental, y contemplar cuáles son las herramientas digitales más eficientes para su creación y desarrollo.
Gracias a la construcción de un inventario de la planta turística-alimentación del distrito de Las Juntas y otro de comidas guanacastecas, además del diseño de una networking que optimice la creación de encadenamientos productivos, se logró determinar cuál debería ser el diseño de una ruta gastronómica de platos populares y tradicionales guanacastecos, la cual incluya los locales dedicados a la temática nacional, que ofrezcan platos preparados con materias primas producidas en la región, y que contemplen una alta transcendencia cultural, permitiendo favorecer la preservación y la salvaguarda del patrimonio cultural guanacasteco.
En síntesis, en el distrito de Las Juntas se ubica una oferta gastronómica conformada por restaurantes, bares-restaurantes y sodas, los cuales poseen amplios menús de comidas populares y tradicionales, tanto de comida guanacasteca y costarricense. En cuanto al patrimonio cultural gastronómico, en el distrito de Las Juntas se logró observar que en los locales gastronómicos preparan distintos platos, tanto tradicionales y populares significativos para la culturalidad de la región. Además de evidenciar el uso frecuente de materia prima propia de la zona. Asimismo, al diseñar una networking, se logra tener a disposición herramientas digitales, por las cuales se genera la construcción de encadenamientos productivos que faciliten la optimización de la logística de los locales gastronómico para realizar compras de materia prima.
Es recomendable realizar investigaciones sobre el comportamiento de la demanda turística de Las Juntas, para determinar las preferencias y expectativas del visitante, así como el principal motivo de la visita a la comunidad, y así ajustar los nuevos productos turísticos a las necesidades y perspectivas de la demanda. Igualmente, la ejecución de estudios técnicos y financieros que reúnan información pertinente para verificar la posibilidad técnica de diseñar una ruta gastronómica y analizar la viabilidad económica de la propuesta. Y, por último, generar una base de datos que muestre el tipo y cuánta oferta turística existe en la región, para que funcione como documentación de partida para futuras investigaciones, o bien, para la creación de nuevas propuestas como la de este trabajo.
In recent years the province of Guanacaste, within the economic context has been favored by the development and boom of the tourism sector, which has meant a demand for local products and services. As for the canton of Las Juntas de Abangares, tourism has little activity, one of the points by which the interest of formulating a proposal to design a gastronomic route is born, being this a product that productively benefits the community and where the tourism sector is related to the cultural one. The main objective of this work is to propose a gastronomic route of popular and traditional dishes in the district of the Juntas de Abangares, which allows the strengthening of local development and the dissemination of the material cultural heritage (PCI) gastronomic of the province of Guanacaste. And to achieve this objective it was necessary to establish methodological processes that allowed to determine the categorization of the gastronomic offer in the district of Las Juntas, where the perimeter was first established,in which workwasdone. Luego, a documentary review of the gastronomic premises was carried outand, subsequently, the information was systemtized in registration sheets for tourist-food plant. Likewise, it was possible to characterize the potential gastronomic products for the preservation and safeguarding of the Guanacaste gastronomic PCI, in the registration fichas created for these, which were generated after the literary review, from where it was establishedor criteria to rule outwhich dish would be part of the route and which would not. And, finally, the fundamental aspects were formulated to design a networking, which optimizes the creation of productive chains in the gastronomic route, through a documentary review, and contemplate which are the most efficient digital tools for its creation and development. Thanks to the construction of an inventory of the tourist-food plant of the district of Las Juntas and another of Guanacastean foods, inaddition to the designor a networking that optimizes the creation of productive chains, it was possible to determine what should be the design of a gastronomic route of popular and traditional Guanacasteque dishes, which includes the premises dedicated to the nationaltheme, which offer dishes prepared with raw materials produced in the region,and that contemplate a high cultural transcendence, allowing tofavor the preservation and safeguarding of the Guanacasteeco cultural heritage. In summary, in the district of Las Juntas is located a gastronomic offer made up of restaurants, bars-restaurants and sodas, which have extensive menus of popular and traditional foods, both Guanacaste and Costa Rican food. As for the gastronomic cultural heritage, in the district of Las Juntas it was observed that in the gastronomic premises they prepare different dishes, both traditional and popular significant for the culturality of the region. In addition to evidencing the frequent use of raw material typical of the area.
