Resumen
La leche de cabra y sus derivados ofrecen beneficios para la salud, pero su consumo en la comunidad universitaria puede variar debido a ciertos factores, impulsando la necesidad de investigar sus hábitos de consumo. El objetivo de este trabajo fue analizar los hábitos de consumo de la leche de cabra y sus derivados en la comunidad universitaria (académicos, administrativos y estudiantes) ubicados en el Campus Omar Dengo de la Universidad Nacional, Heredia, además de su enlace con la edad, género y actividad física. El estudio fue no experimental y de carácter transversal, recopilando la información mediante una encuesta estructura y basada en un muestreo probabilístico en 614 personas durante los meses de junio y julio de 2023. Además, se utilizó la prueba de chi cuadrado (X2) para evaluar las relaciones entre variables categóricas. Un 22,10% de la población indicó consumir productos lácteos caprinos, con un 9,6% que consume productos adquiridos en el Programa de Producción Sostenible Rumiantes Menores (PPSRM). Se encontró una relación altamente significativa (p <0,01) entre el conglomerado y consumo de lácteos caprinos, conglomerado y saber del PPSRM, género y frecuencia de ejercicio. Y una relación significativa (p <0,05) entre el género y consumo de lácteos caprinos. Se determinó que el consumo actual de los productos lácteos se basa principalmente en el gusto del consumidor. Siendo el yogurt saborizado y el queso fresco, los productos de alta aceptación entre los encuestados. El mercado de lácteos caprinos en la comunidad universitaria tiene un alto potencial de crecimiento. Actualmente, los hombres en puestos académicos y administrativos, con mayor actividad física, son los principales consumidores de estos productos.
Goat milk and its derivatives offer health benefits, but their consumption in the university community may vary due to certain factors, driving the need to investigate their consumption habits. Aim. The study was non-experimental and cross-sectional in nature, collecting information through a structured survey and based on probabilistic sampling in 614 people during the months of June and July 2023. In addition, the chi square test (X2) was used to evaluate the relationships between categorical variables. 22.10% of the population indicated that they consume goat dairy products, with 9.6% consuming products acquired in the Sustainable Production Program for Minor Ruminants (PPSRM). A highly significant relationship (p <0.01) was found between the cluster and consumption of goat dairy, cluster and knowledge of the PPSRM, gender and exercise frequency. And a significant relationship (p <0.05) between gender and consumption of goat dairy products. It was determined that the current consumption of dairy products is based mainly on consumer taste. Flavored yogurt and fresh cheese were the products with high acceptance among those surveyed. The goat dairy market in the university community has high growth potential. Currently, men in academic and administrative positions, with greater physical activity, are the main consumers of these products.
