Desarrollo de una guía metodológica para la creación de modelos de negocio, que represente una alternativa de formalidad de empresas en los cantones del ámbito de acción del GAT Sur: caso de estudio panadería

Resumen
Por medio de este trabajo, se presenta una guía metodológica que propone ser de aplicación sencilla, como una alternativa para la formulación de modelos de negocio principalmente para grupos organizados, cuyos miembros generalmente no cuentan con una educación formal. Dicha guía incluye hojas de trabajo para cada taller, material a ser distribuido entre los asistentes, donde expondrán y debatirán sus opiniones, además, se plantea que el ambiente de formación sea dinámico y participativo. Su fin primordial es, brindar los procedimientos para que por medio del acompañamiento de un equipo facilitador, una organización adquiera el conocimiento para planear, analizar, evaluar y desarrollar ideas de negocio. Esta herramienta, es una adaptación que une aspectos de los planes de negocio tradicionales y los bloques que propone el modelo de CANVAS, por esta razón, se diseñó para ser aplicada en ocho talleres interactivos, distribuidos en cinco etapas, las cuales son: evaluación del perfil de la organización, análisis de mercado, análisis técnico, análisis financiero y modelo de negocio, en este último se presenta los resultados de los talleres previos mediante un informe, que servirá para completar formularios o perfiles de solicitud de recursos en instituciones financieras. Para mayor comprensión sobre el contenido de este instrumento metodológico, se ejemplificó cada tema a través de un caso de estudio de panadería, evaluando las opciones de ubicación por cantón y distrito en función de factores como oferta y demanda, se determinó a través del método cualitativo por puntos que el lugar para establecer dicho negocio corresponde al distrito de Golfito. Este caso, es parte del análisis y la investigación de datos reales sobre panificación, recolectados a partir de la aplicación de instrumentos como: entrevista, cuestionario y observación. Además, se presenta un análisis de rentabilidad y sensibilidad de la propuesta de panadería.
Through this work, a methodological guide is presented that proposes to be of simple application, as an alternative for the formulation of business models mainly for organized groups, whose members generally do not have a formal education. This guide includes worksheets for each workshop, material to be distributed among the attendees, where they will present and discuss their views, also raises that the training environment is dynamic and participatory. Its main purpose is to provide the procedures so that through the accompaniment of a facilitating team, a organization acquires the knowledge to plan, analyze, evaluate and develop ideas for business. This tool is an adaptation that unites aspects of business plans and the blocks proposed by the CANVAS model, for this reason, it was designed to be applied in eight interactive workshops, distributed in five stages, which are evaluation of the organization's profile, market analysis, technical analysis, analysis financial and business model, the latter presents the results of the workshops report, which will be used to complete application forms or profiles for resources in financial institutions. For a better understanding of the content of this methodological instrument, we exemplified each theme through a bakery case study, evaluating the options for location by canton and district based on factors such as supply and demand, it was determined through the qualitative method by points that the place to establish that business corresponds to the district of Golfito. This case is part of the data analysis and research bakery, collected from the application of instruments such as interview, questionnaire and observation. In addition, a profitability analysis is presented and sensitivity of the bakery proposal.
