Resumen
El langostino es una especie que está presente a lo largo de la Costa Pacífica Centroamericana; pese a que su disponibilidad no ha sido documentada aún en Costa Rica, se conoce empíricamente de su abundancia en la zona del Golfo de Papagayo. El contenido de carne para la comercialización en esta especie, por su tamaño, es muy escaso, por lo que es necesario evaluar nuevas opciones para el aprovechamiento de este recurso, surgiendo el interés en el estudio de las ventajas que presentaría la utilización de la totalidad de este camarón para extraer su quitina y posteriormente sintetizar el quitosano, un derivado producido a partir de la desacetilación de la misma, con muchas aplicaciones en la industria farmacéutica y con un elevado valor comercial.
