Pasantía en la Unidad de Calidad de Leche de la Cooperativa de Productores de Leche Dos Pinos R.L.
Abstract
Se realizó una pasantía en la Unidad de Calidad de Leche de la Cooperativa
de Productores de Leche Dos Pinos R.L., la cual tuvo como premisa, velar por que la
leche producida en cada una de las unidades de la cooperativa sea de calidad e
inocua para el consumidor final, esto mediante la vigilancia y asesoría continua de
los productores y personal encargado del proceso.
La pasantía se desarrolló en el distrito de Aguas Zarcas del cantón de San
Carlos, en donde se trabajó con los propietarios y el personal de 16 unidades
productivas, para un total de 2587 vacas lecheras, durante los meses de marzo, abril
y mayo del 2020. Se les brindó asesoría integral de todos los aspectos relacionados
con la mejora de la salud de la ubre y de manera paralela, se realizaron muestreos
de leche mensuales, de cada uno de los hatos para realizar el conteo individual de
células somáticas en leche. A través de los muestreos de células somáticas se logró
evidenciar que un 34% del hato estudiado estaba por arriba de las 200.000 cels/mL,
de igual manera se relacionaron con número de lactancia, días en lactancia y
producción láctea de las vacas muestreadas.
Además de los esfuerzos por mejorar los conteos de células somáticas, de
cada una de las unidades productivas, se incentivó el uso del programa VAMPP
Bovino®, específicamente del módulo de salud de la ubre, como herramienta
facilitadora para el registro y análisis de la información recopilada, con el fin de ubicar
de forma certera los problemas de cada finca y dar una solución integral. An internship was carried out in the Milk Quality Unit of the Dos Pinos RL Milk
Producers Cooperative, whose premise is to ensure that the milk produced in each of
the cooperative's productive units is of quality and safe for the final consumer, this
through continuous monitoring and advice from producers and personnel in charge of
the process.
The internship took place in the Aguas Zarcas district of the San Carlos
canton, where it worked with the owners and staff of 16 productive units, with a total
of 2,587 dairy cows, during the months of March, April and May 2020. They were
given comprehensive advice on all aspects related to the improvement of the health
of the udder and in a parallel way, monthly samplings were carried out of each of the
herds to perform the individual count of somatic cells in milk. Analyzing the somatic
cell samples, it was possible to show that 34% of the herd studied was above
200,000 cels/mL, in the same way they were related to the number of lactation, days
in lactation and milk production of the sampled cows.
In addition to the efforts to monitor and improve somatic cell counts, both
individual and in the tank of each of the productive units, the use of the VAMPP
Bovino® program was encouraged, specifically the udder health module, as a
facilitating tool. for the registration and analysis of the information collected, in order
to accurately locate the individual problems of each farm and provide a personalized
and comprehensive solution.
