Evaluación del impacto que ocasionaría la implementación de la norma de certificación Rainforest en la estructura financiera Beneficio Los Cerros Tarrazú en la Zona de los Santos (2017)

Abstract

La presente investigación está enfocada en el Beneficio Los Cerros Tarrazú, que inició operaciones en el año 2007. El Beneficio se ha encargado de producir, procesar y comercializar el producto del café, en Tarrazú, específicamente en la comunidad de San Carlos. Es un micro Beneficio que viene en crecimiento, se creó con el fin de acoger un segmento del mercado diferenciado con respecto a la comercialización de café tradicional y tiene como fin consolidar su desarrollo con el café oro certificado. Una de las estrategias para generar el valor agregado al café es implementar Rainforest Alliance Certified, una certificación ambiental, que promueve la capacitación a los productores en procesos que desarrollen la producción y que su vez conserven la salud del suelo. Sin embargo, existe una incertidumbre con respecto al impacto financiero que puede generar la certificación y el problema que se genera es conocer ¿Cuál es la rentabilidad incremental, mediante el análisis costo/beneficio, que puede obtener el Beneficio Los Cerros Tarrazú con la implementación de la norma Rainforest?

Para el desarrollo de la investigación se realizó un diagnóstico de las fincas proveedoras de materia prima para determinar si se encuentran en condiciones de producir café oro bajo los criterios de la norma Rainforest donde se obtuvieron deficiencias en la mayoría de las fincas con respecto a los criterios que tiene la norma, sobre todo en cuanto a aspectos legales como lo es el pago y reporte de planillas y con respecto al uso de fertilizantes químicos.

Se determinó el impacto en los costos de capitalización y operativos que generaría la implementación de la norma Rainforest en el Beneficio Los Cerros Tarrazú y a su vez se evaluó la variación en los ingresos incrementales que a su vez se generan nuevos costos y gastos operativos que, con respecto a la variación de los ingresos incrementales, se determina que estos logran cubrir los nuevos costos y gastos generados por la norma Rainforest.

Se evaluó el grado de rentabilidad financiera la cual obtendría el Beneficio Los Cerros Tarrazú al implementar la norma Rainforest, se determina que esta estrategia de inversión solo generaría un efecto mitigador en cuanto a las pérdidas que podría presentar este Beneficio en los próximos años, esto debido a su estructura actual de ingresos, gastos y costos, misma que sirve como para realizar la nueva inversión. Además, se desarrolla un análisis de sensibilidad en donde se genera un panorama optimista, donde se realizan cambios solamente a los precios del café, estos logran cubrir los costos y gastos que requiere el Beneficio Los Cerros Tarrazú al certificarse por medio de la norma Rainforest, por lo que se recomienda generar valor agregado a sus productos para diferenciarse en el mercado y así mejorar exponencialmente sus ingresos.

This research is focused on the Los Cerros Tarrazú mill, which began operations in 2007. The mill has been in charge of producing, processing and commercializing the coffee product in Tarrazú, specifically in the community of San Carlos. It is a micro mill that is growing, it was created with the purpose of welcoming a market segment that is differentiated with respect to the commercialization of traditional coffee and has the purpose of consolidating its development with certified gold coffee. One of the strategies to generate added value to coffee is to implement Rainforest Alliance Certified, an environmental certification that promotes the training of producers in processes that develop production and at the same time conserve the health of the soil. However, there is uncertainty regarding the financial impact that certification can generate and the problem that arises is to know what is the incremental profitability, through cost/benefit analysis, that the Los Cerros Tarrazú mill can obtain with the implementation of the Rainforest Alliance Certified standard?

For the development of the research a diagnosis of the farms that supply raw material was carried out to determine if they are in conditions to produce gold coffee under the criteria of the Rainforest Standard. Deficiencies were found in the majority of the farms with respect to the criteria of the standard, especially with respect to legal aspects such as the payment and reporting of payroll and with respect to the use of chemical fertilizers.

The impact on capitalization and operating costs generated by the implementation of the Rainforest standard at the Los Cerros Tarrazú Mill was determined, as well as the variation in incremental income, which in turn generates new operating costs and expenses that, with respect to the variation in incremental income, will be able to cover the new costs and expenses generated by the Rainforest standard.

The degree of financial profitability obtained by the Los Cerros Tarrazú Mill by implementing the Rainforest standard was evaluated. It was determined that this investment strategy would only generate a mitigating effect in terms of the losses that this Mill could present in the coming years, due to its current structure of revenues, expenses and costs, which serves as a basis for the new investment. In addition, a sensitivity analysis is developed where an optimistic scenario is generated, where changes are made only to coffee prices, these are able to cover the costs and expenses required by the Los Cerros Tarrazú mill to be certified through the Rainforest standard, so it is recommended to generate added value to their products to differentiate themselves in the market and thus exponentially improve their income.
