Producción y comercialización de productos derivados del fruto del banano por parte de la Asociación de Productores en Pro del Medio Ambiente (APROMACAM).

Abstract

El proyecto de comercialización y producción de subproductos derivados del fruto del banano nace a raíz de la problemática socio económico que se vive en la zona de Calle Mora en el Distrito de Rio Nuevo de Pérez Zeledón, donde el desaprovechamiento del fruto de banano es la principal causa precursora. Por tanto, con el afán de ayudar a solventar esta problemática se procedió a elaborar una investigación donde se determinará si es factible la construcción de una planta procesadora del fruto del banano. Para la ejecución de este proyecto se realizó una serie de estudios que ayudaron a determinar la factibilidad del mismo, dentro de los estudios realizados se encuentran: el estudio de mercado, dentro de este estudio se determinó el mercado meta a atender, los subproductos a realizar según gustos y preferencias del mercado, los cuales son el banano pasa, el banano snack y la harina de banano, así como también identificar los medios de comercialización más aptos para el proyecto, entre otros. De igual manera se realizó un estudio técnico en el cual se valoraron el costo unitario de producción de los productos a realizar, así como también se estableció la tecnología y materiales a requerir para poner en marcha la planta y el lugar de establecimiento de la misma. En cuanto al estudio administrativo se logró establecer un organigrama con los principales puestos a requerir y las funciones que el personal ha de tener. Otro estudio llevado a cabo fue el legal, en el cual se plantea de forma clara y precisa los permisos y patentes a requerir para ejecutar el proyecto, además se valoró el impacto ambiental del mismo, para ello se presenta un plan ambiental donde se evite la contaminación de aguas residuales, y se da una recomendación para eliminar los desechos sólidos. Con los anteriores estudios se logra recopilar la información para establecer si el proyecto es factible o no, para ello en el estudio financiero se valora los ingresos a obtener con el proyecto en un horizonte de evaluación de diez años al igual que los gastos que se van a incurrir.

The project of commercialization and production of by-products derived from the fruit of the banana was born as a result of the socioeconomic problem that is lived in the zone of Calle Mora in the District of Rio Nuevo of Perez Zeledon, where the waste of the fruit of banana is the main precursor cause. Therefore, in order to help solve this problem, an investigation was carried out to determine if the construction of a banana fruit processing plant is feasible. For the execution of this project, a series of studies were carried out that helped to determine the feasibility of the project. Among the studies carried out are: the market study, within this study the target market to be served was determined, the sub-products to be made according to the tastes and preferences of the market, which are raisins, snack bananas and banana flour, as well as identifying the most suitable means of commercialization for the project, among others. Similarly, a technical study was carried out in which the unit cost of production of the products to be made was assessed, as well as the technology and materials required to start up the plant and the place of establishment of the same. With regard to the administrative study, an organizational chart was established with the main positions to be required and the functions that the personnel must have. Another study carried out was the legal one, in which the permits and patents to be required to execute the project are clearly and precisely stated. In addition, the environmental impact of the project was evaluated, for which an environmental plan is presented to avoid the contamination of residual waters, and a recommendation is given to eliminate the solid waste. With the previous studies it is possible to compile the information to establish if the project is feasible or not, for this purpose the financial study values the income to be obtained with the project in a ten year evaluation horizon as well as the expenses to be incurred.
