Resumen
El médico veterinario tiene un papel fundamental en la preservación de la inocuidad de los
alimentos de origen animal. Una de las principales funciones es la inspección ante-mortem y
post-mortem, con el fin de asegurar carne libre de enfermedades y apta para consumo humano.
El estudio realizado se dividió en dos partes, donde primero se acompañó al Médico
Veterinario en sus labores, en especial la inspección post-mortem, durante este tiempo se
sacrificaron 6831 animales de los cuales 34 (0,5%) fueron decomisos totales, de los decomisos
totales la principal causa fue por degeneración grasa generalizada.
La mayor causa de decomiso de cabeza fue por contaminación (83,6%), en vísceras rojas el
mayor órgano decomisado fue el hígado por telangiectasia (41,7%), seguido por riñones por
nefritis (47,9%), bazo por congestión (37,6%) y corazón por pericarditis (41,1%).
La segunda parte de la práctica dirigida fue un estudio retrospectivo (2015-2016) de las causas
de decomiso en cuatro plantas certificadas para exportación, donde la principal causa de
decomiso total fue caquexia (20,2%), y en vísceras rojas, el hígado fue por abscesos (34,5%),
riñón por quistes (43,4%), bazo por congestión (43,0%) y corazón por pericarditis (27,3%).
The veterinarian has a fundamental role in preserving the safety of food of animal origin. One of the main functions is ante mortem and post mortem inspection, in order to ensure meat free of disease and fit for human consumption. The study was divides in two parts, first part where the veterinarian was accompanied in his work, especially in the post mortem inspection, during the time 6831 animals were slaughtered, 34 (0,5%) were total decomises, of the total decomises the main cause was generalized fat degeneration. The major cause in the head was contamination (83,6%), in red viscera the mayor organ confiscated was the liver by telangiectasia (41,7%), followed by kidney by nephritis (47,9%), spleen by congestion (37,6%) and heart by pericarditis (41,1%). The second part was a retrospective study (2015-2016) of the causes of confiscation in four export-certified abattoir, where the main causes of total confiscate was cachexia (20,2%), and in red viscera, the liver was abscesses (34,5%), cyst in kidney (43,4%), spleen for congestion (43,0%) and heart by pericarditis (27,3%).
