Resumen
El presente documento tiene como objetivo contribuir en la construcción de un marco analítico para el análisis de la industria de tostado y torrefacción de café en su aporte al desarrollo del sector cafetalero, el industrial nacional, el mercado interno y la ruralidad. Para ello, se realiza un análisis desde la discusión más general de la industrialización, focalizada en América Latina, por medio de la revisión bibliográfica de una muestra discrecional de los temas, muchos de ellos con una perspectiva desde la actualidad. El análisis está orientado al estudio de la industrialización (tostado) de una materia prima producida en Costa Rica, considerada como un producto tradicional que ha marcado la historia económica y social del país. La metodología seguida es básicamente una revisión y discusión de literatura, que busca analizar y comprender la industria de tostado y torrefacción de café y su aporte al sector cafetalero y a la industria nacional. La discusión general desarrollada en el documento respecto a la industrialización en América Latina en el largo plazo conduce a establecer los elementos a considerar en el análisis de la industria de café tostado, planteando una periodización de su evolución.
This document aims to contribute to the construction of an analytical framework for the analysis of coffee roasting industry in its contribution to the development of the coffee sector, national industrial, the domestic market and rural areas. This analysis is carried out from a more generally discussion of industrialization, focused on Latin America, through the bibliographic review of a discretionary sample of the topics, many of them with a current perspective. The analysis is oriented to the study of the industrialization (roasting) of a raw material produced in Costa Rica, considered as a traditional product that has left a strong feature over the economic and social history of the country. The applied methodology is basically a review and discussion of literature, which seeks to analyze and understand the coffee roasting industry and its contribution to the coffee sector and the national industry. The general discussion developed in the document, in regards with the long term industrialization process in Latin America, leads to establishing a periodization of the evolution of the Costa Rican coffee roasted industry.
