Si bien Costa Rica no ha producido todo el arroz de su famoso –chifrijo– o –el gallo pinto–, se han mantenido casi 500 productores de arroz que representan a las cinco regiones de planificación del país ubicadas en las zonas costeras y los grandes extremos norte y sur del país. El arroz y los frijoles representan las principales fuentes de cereal y proteína en la alimentación de los ticos, como comúnmente se les dice a los costarricenses.
