Estudio preliminar del contenido polifenólico y capacidad antioxidante de la especie Malus domestica cultivada en Costa Rica

Resumen
Especies como la manzana de altura han sido sometidas en Costa Rica a un proceso de
domesticación para adaptarlas a las condiciones climáticas de ese país y específicamente
a las de la Zona de los Santos de Costa Rica. Este esfuerzo ha llevado a la obtención en la
actualidad de productos que son bien aceptados en el mercado por su sabor, olor, facilidad de
manipulación, entre otros. Con el avance del conocimiento biológico y químico, los estudios del
contenido de polifenoles en este tipo de frutos se han incrementado, demostrando que estos
poseen propiedades bioactivas, tal como su potencial antioxidante, siendo este conocimiento
un factor importante en la creciente utilización de frutas y suplementos nutricionales con
contenido polifenólico importante a nivel internacional y en la dieta de los costarricenses. De
allí, que el presente trabajo se enfoca en realizar estudios en frutos de altura cultivados en Costa
Rica, tanto desde el punto de vista de mejora agroecológica, así como de la determinación del
contenido de polifenoles y su capacidad antioxidante. Se adquirieron frutos de dos variedades
de la especie Malus domestica, a saber, manzana variedad Ana y Jonas, que fueron procesados
en el laboratorio con el fin de ser utilizados para estas determinaciones. Además, se trabajó
en la mejora de las condiciones agroecológicas para el cultivo con el uso de microorganimos
de biocontrol contribuyendo a la protección de suelo. Esta publicación presenta información
preliminar de estos estudios, dada su relevancia para el conocimiento científico con resultados
que se publican por primera vez para esta especie económicamente importante cultivada en
Costa Rica.
Species such as high altitude fruits, such as Malus domestica have been introduced in Costa Rica and adapted to its climatic conditions, being cultivated specifically in Los Santos region. These efforts have allowed to obtain fruits that are well accepted in the market because of their flavor, aroma and easiness of handling. On the other hand, the advancement of biologic and chemical techniques have enabled more detailed research on polyphenols –abundant in these fruits- because of their bioactive properties such as antioxidant potential. This scientific knowledge has in turn been an important factor in a higher consumption of fruits with high polyphenolic contents both fresh and in nutritional supplements. Hence, the present work focuses in the study of these high altitude fruits cultivated in Costa Rica, regarding agro-ecologic improvement as well as determination of polyphenolic contents and antioxidant capacity. Two cultivars of Malus domestica were acquired, namely Ana and Jonas, which were processed to carry out analyses. Also, work was performed in agro-ecologic conditions amelioration and biocontrol for soil protection. This publication includes preliminary data because of the relevance of the scientific results published for the first time for this economic important species cultivated in Costa Rica.
