Para ello se analiza la coyuntura desde el 2019 al 2020 a efectos de dar cuenta de la magnitud de los impactos, a partir de un análisis de los principales agregados macroeconómicos que reflejan la situación alimentaria del país. El abordaje en este documento se inspira en Piñeiro et al. 2021, quienes recientemente plantearon que la solución del acceso a los alimentos es reconocida hoy en día como resultado del funcionamiento del sistema alimentario, que tiene un alcance más allá de la agricultura, con facetas productivas multisectoriales, y que socialmente tiene una connotación multidimensional (Piñeiro et al. 2021, pág.19). Sin embargo, ese sistema alimentario no se ha puesto en evidencia relevante dentro del sistema institucional global, por lo cual se enfrentan desafíos de la alimentación de la población que se agravan bajo el marco de emergencias como la pandemia del Covid-19. Al respecto, es importante tener claridad sobre los aspectos que comprenden el sistema alimentario en el que ¨ la agricultura no es un sector más o una actividad productiva aislada¨ (Piñeiro et al. 2021, pág.19), sino que tiene una importancia central, formando parte de un sistema complejo y transversal de actividades.This document constitutes a reflection on an important but little discussed topic that could provide insight so that in the future the Costa Rican food system could be improved.
